Looking for a santoku knife that’s a cut above the rest?

This **Due Cigni Hakucho santoku** is a knife to love. Originally the santoku is a chef's knife from Japan. In Japan the knife is mostly used to prepare sushi, but this Japanese chef's knife is really a utility knife. Cutting, crushing and scooping meat, fish, vegetables and fruit: it is all possible with this all-rounder.


## Due Cigni Hakucho handle


The classic Japanese handle is made from olive wood. The soft, light-brown colour and the fragrance of olives radiate luxury. The flaming pattern adds an extra dimension to the handle. The handle was secured to the full-tang blade with three stunning rivets. To maintain the stunning colour of the olive wood, and to not affect the sharpness of the blade, we recommend cleaning this knife by hand. Dry it after cleaning it to prevent discolourations or tears and to make sure the wood doesn't bend. 


## Due Cigni Hakucho blade


The blade is made from Nitro-B 4119 stainless steel.  This is a type of steel with a high nitrogen content. It has an extremely thin microstructure and is highly resistant to corrosion. This type of steel is also easy to sharpen at home, should it lose some of its sharpness over time. The beautiful Kanji characters on the blade provide the finishing touch.


## Due Cigni Hakucho collection


The kitchen knives from the Due Cigni Hakucho collection were designed by Oreste Frati. The founder of FOX Knives. In addition to being the owner of Fox Knives, he is a gifted designer. He used the Japanese style as the basis for this collection of kitchen knives. The stunning markings on the blade emphasize this, and add to the design. The knives are produced in Italy. 


## About Due Cigni


Due Cigni (two swans) is a traditional, Italian knife manufacturer that has been producing top-quality kitchen knives, (pruning)scissors and saws for over hundred years. All products are produced in the Italian knife capital of Maniago. Some years ago the brand was bought by Fox Cutlery, also located in Maniago. They continued the Due Cigni tradition of producing fine, top-quality kitchen knives.
